Zojirushi Home Bakery looks like an ordinary bread machine, but its additional features are a welcome surprise. It not only makes French, sandwich, basic, wheat, homemade, and other bread types, but it also makes jams, cakes, and pizza dough. Using the technology found in most bread machines--dual kneading blades, automatic timer, crust control, and auto shutoff, the Home Bakery heats and mixes jam ingredients, leaving refrigeration as the final step. The cake setting operates similarly to the bread process, but the machine adjusts its temperature to retain the moisture of cakes, such as German chocolate or butter.

Aside from the plethora of uses, this machine offers many important technical features. Its quick baking option allows bread making in only two hours, the time usually spent waiting for the dough to rise. The timer also can delay baking for up to 13 hours. A beep signal lets you know when you should add fruits or nuts to the dough or jam, and another sounds when the loaf, cake, or jam is finished. Cleanup is simple, as the internal pan and kneading blades are coated with a nonstick material. After having terrible problems with three or four different brands of bread machines (the kneading paddles leaked oil and/or got stuck so they wouldn't even turn, or the bread wouldn't get done or wouldn't come out of the pan...), I tried a Hitachi bread machine and was extremely satisfied. Unfortunately, when I needed a replacement machine, I found that Hitachi was no longer selling bread machines--they recommended Zojirushi on their website. I had never heard of Zojirushi, but purchased a machine (model BBCC-V20)from Amazon.com (free shipping!) in 2003. This machine has been the best machine I've ever had (and I've been through MANY!) I can't vouch for all the fancy cycles (like jam, cake, etc.) because I only wanted to use the bread and the dough cycles, but the machine has hung on through thick and thin and LOTS of use. I especially liked that the timing function even worked when I was using the dough setting (unlike my previous bread machines). In the past few months I noticed what I thought were little flecks of teflon from the paddles ending up in the bread...today I noticed a HOLE in one of the kneading paddles, so I guess it was actually flecks of metal... So why, you are asking, do I give this machine 5 stars? It's given me 5 years of almost non-stop use, and I guess I just wore the kneading paddle out. The 5 stars is because I've never had a bread machine come even CLOSE to 5 years. (And the kneading blades still turn fine and never leaked oil, and the bread is always done just right--nothing at all wrong with the machine except for the hole in the paddle.) So, 5 stars--one for each year of use!

We had gone through 4 other bread machines. Most lasted only a year. I guess we are abusive since it gets used daily. We have had this one now for 3-4 years and it is still going strong. Those that have had problems will have problems with others as well. You must follow directions or know how to substitute ingrediants. We use ours to bake bread of all kinds and to make dough. We have replaced the beaters once during this time after a period of heavy use making wheat bread. The coating started to peel off. To be expected for a machine that sees daily useage. No we are not a bakery. Our kids go through a lot of bread and take their lunch to school. Nothing like the smell of freah baked bread when you wake up in the morning.

I purchased this bread maker a couple of years ago and absolutely love it. The bread, even the basic recipe on the side of the machine, is excellent. It's as good as they make in the bakeries. Folks find it hard to believe I made the bread myself (I really don't - the machine does!) I frequently slice the bread with an electric knife and freeze it for making sandwiches. If this machine broke today, I'd go and buy another one tomorrow. It's that good.

Just thought I'd let prospective buyers know that this machine really is a reliable workhorse. I'm frequently amazed by how poorly so many new appliances are constructed. My 20+ year old KitchenAid mixer, my ancient Cuisinart food processor and this bread machine have all been excellent investments.
I primarily use the bread machine as a dough maker and sourdough/poolish starter. If I do make bread in the machine it's to take advantage of the timed start feature so that we can wake up to hot cinnamon craisin bread on cold mornings.

I've had one of these forever. Bought one back in 1998. I use it all the time. I mix pizza dough in it and bake all sorts of breads in it. I have found that you need about 4 to 4 1/2 cups of flour to get a decent loaf.
