As I stated about the Seki Magoroku paring knife, I'm not certain if this line is discontinued or not. KAI doesn't have them on their website or in their pamphlets. What a great knife this is! The edge is curved up and makes the grip even more comfortable. The edge curves up slightly right up to the tip. This makes starting slices very easy and contacting the board very even. I have used other santoku blades and didn't like very flat edges or super curved edges. This is a great compromise. The blade is also very thin. It looks to be convex, in fact. With no "drop off" to the final edge, it slices effortlessly. I've read reviews where people rate santoku knives lower because they chip or bend when they are chopping. This is strange to me since santokus aren't supposed to be heavy choppers or boning knives. Use this thing on vegtable and filet slicing and you will enjoy it, for sure. The weight distrobution is great. It's very light and the wooden handle is comfortable. Speaking of the wooden handle, I get to the one aspect that might discourage some buyers. You cannot put this knife in a dishwasher. In fact, you really should be careful on how wet the handle gets anytime. Put some food-grade mineral oil (like the kind you would use on a cutting board) on it occasionally and you should be just fine. Overall, this is a beautiful knife that slices like a pro. I enjoy using it. I enjoy sharpening it. I don't even mind washing it.

I purchased this knife for my mother who owned an original Seki Magoroku knife that belonged to her mother. She enjoys it immensely and raves about how high the quality is and how she can remember how similarly great her mother's original knife was so many years ago. I as a chef personally tested this knife out and loved the feel in my hand (both the weight, balance, and the shape of the grip itself) and it sliced through anything I threw at it with elegance. Recommended for anyone that wants a great all-around use knife with a great look and traditional Japanese features.
