This 5.25-in. Hollow Ground Santoku Knife is ideal for mincing herbs, chopping onions or slicing kiwi. The hollows on the edge of the blade create air pockets between the blade and food, reducing surface tension. Fruits and vegetables are sliced effortlessly and with perfect precision. Loved by professional chefs around the world, Global knives are an excellent choice for the serious home cook. The thin and razor sharp Global blade allows the cook to cleanly slice through foods, preserving the integrity of the ingredient and maximizing its flavor. The majority of Global knives are ground to a straight point rather than the western style of beveling the edge. To balance their knives Global uses a hollow handle that is filled with just the right amount of sand to create the correct balance. The handle has its own unique darkened dimples for a non-slip grip. Because the knives are very light weight they reduce hand fatigue. As I sliced through a tomato for the first time....I said yikes! This knife came out of the box very sharp. This was the first Global knife I bought and within a few weeks I've expanded my Global knife collection to 3 knives with 3 more picked out to purchase. Other reviews have stated the grip is a little small and they are correct. The knife is very well balanced though so I don't have an issue with the handle. To keep the knife sharp I use the Global knife sharpener which also works quite well. Be careful when washing the knife. I'll have quite a nice collection of Global knives sitting in my kitchen drawer shortly.

One of the best knifes I own, I will be acquiring more Global knifes in the future. I thought I had some great knifes with the Henckels that I own. The sharpness far exceeds my old knifes. This knife is a true pleasure to use.

This is probably my favorite knife that I own. The first thing you will notice out of the box will probably be the unusual shape/look of it. This is one of the main reasons I am so enraptured by this knife. For a person with small/medium hands (like myself), the sloping design of the handle gives the user a great deal of control and adds a huge amount of comfort. When I first picked up the knife, it felt like an extension to my arm, which is exactly how a good knife should feel.

As for the blade, all I can say is that it is SHARP! Much sharper than most German-forged knives, like Wustoff or Henckels. When I compared this Global knife to some top-of-the-line Henckels, the difference was amazing. The ease of cutting through most fruits and vegetables was astounding. It slices as if you're just running the knife through soft butter.

I have several Shun knives as well, and that brings up the only negative aspect I could find about this knife. When compared to the blades on my Shun knives, the sharpness is very similar; however, the Global blades do tend to dull much quicker. I assume this is due to the combination of metals used in the steel, signifying that Shun uses a superior steel. This is solved by a few quick run throughs on the global minosharp water knife sharpener though, and the knife is as good as new.

Although the blade does need honing often, it is still my most used knife solely on the design and sharpness it offers. A person with larger hands might prefer Shun knives, but the only way to tell is to handle each and determine for yourself.

Since I am not a fan of large knives, this one is perfect for me!!! I love it and use it for cutting meats & veggies. This knife is perfectly balanced and easy to use. I just have to keep it away from my husband, so he won't be tempted to put it in the dishwasher.

I have used many different knives; some good... most not so good. At work I have a very nice selection of Wusthof, Henckels, F. Dick, and Furi among others. So when I decided to buy my own cutlery set to do double duty at home and at work I thought I would give these Global knives a shot to see if they were worth the extra coin. I decided to pick up this small santoku because it was relatively cheap and I didn't want to spend a ton of money on something that was for experimental purposes. I also knew that the design and size of this knife would make it useful for a variety of tasks such as chopping herbs, vegetables and even paring; all of which demand a very sharp knife lest you mangle tomatoes and macerate basil. As soon as this knife arrived on my doorstep I pulled it out of the box and quickly chopped through a button mushroom (which I didn't need and promptly fed to my dog) This task was accomplished adequately but I was not overly impressed until I made dinner that night and was able to cut the finest, most even slices of lemon with perfect ease. This knife then went right through a tomato like nothing I have ever seen before. Blissful sighs filled the kitchen as I cleaned and portion orange roughie, chopped garlic, and diced onions. It was such a joy to do prep work with and the food even seemed to taste better because I knew that the sharp blade helped it to retain more of its flavorful juices instead of pressing them out onto the cutting board. Even the handle of this knife is fantastic. With ordinary knives wich have wood or some other material fastened to the tang, I always find myself pinching the blade between my thumb and forefinger just above the handle, but the recess on this knife at the base of the blade allows me to hold the knife comfortably and not so perilously close to the edge. I love this knife and I highly recommend it to the professional chef and a serious home cook alike. It is a marvelous buy if you can afford the price. I of course cannot, but I am definitely going to buy more anyway and probably just hide them at work so my wife doesn't kill me for spending so much money on knives.
