Amazon.com Review Branching out from its already successful cookware line, Anolon's Advanced collection features high-grade materials with substantial weight. Blades are forged from high-quality German carbon steel that resists rust and food stains. The stainless steel is ice-hardened for additional strength and longer edge retention. Blades are then polished with glass to produce a sharper cut but an edge that is smoother to the touch. This 7-inch santoku combines the best elements of a chef knife and a cleaver, producing straight, precise cuts of raw fish, poultry, or meat and uniform mincing of vegetables. Great for speedy prep work, the blade is hollow ground with "dimples," which create air pockets that prevent foods from sticking during slicing. Full tangs and a counter balance cap on the Advanced Collection cutlery provide superior balance, while a rounded blade spine adds more comfort during extended periods of prepping. Ergonomically-shaped handles with cushioned non-slip Santoprene padding offer a comfortable, secure grip--even when cutting with wet hands. I've owned this knife for well over a year now and have used it for the majority of this time as my go-to knife for just about every cutting task. In this time, it has been used both properly and improperly (i.e., cutting directly on a metal cookie sheet) and the edge has stayed impressively sharp. During this time, the rubber coating on the handle has stayed in place extremely well; there is no sign of the handle peeling up or sliding off. I've been so impressed that I've now bought several additional knives from this same line and they all show the same characteristics of durability, fantastic balance, impressive ability to hold an edge, and so on. In comparison to other knives at a similar pricepoint, this Santoku-style knife far and away the best value for the home chef of the knives I've used. For anyone considering a knife set, I would heartily recommend going with several knives from this line (in this order of purchase: 7.5" Santoku, 5" serrated utility, 3.5" paring knife, and 6" boning knife.) rather than a sub-par (and only dubiously more useful) set for the same price.
decent knife for price February 10, 2008 A. Sellers (Rockville, MD USA) This is a decent knife for the lower end of the market. However, I felt the blade was a little thick and the knife a bit heavy (I know that's a plus for some people but not for me).

I purchased this knife 2 months ago on sale for about $25 at bed bath & beyond. The knife has great balance, can be sharpened to razor sharpness, and holds an edge well. The metal has a glassy polish finish that prevents food from sticking to the knife. The only problem with this knife is that it is thicker than your normal santoku knife. Usually, the more expensive santoku knives will indicate "thick blade" or something of that sort. So if you don't mind the thicker blade, this knife is really a good piece of cutlery.

This knife met all my expectations, it's sharp and cuts anything well, even tomatoes (and my fingers). It's a good value at under $40.

I have one knife in my kitchen, and this is it. Granted, because I live in NYC, I rarely cook. However, whatever I need it for this knife easily accomplishes, and it's better alone than any set of knives I've bought in the past. For the price, it's a steal.
