Editorial Reviews:

Product Description
For quick, efficient cutting and chopping of vegetables and meat, this Santoku knife is the one to reach for. The straight, sharp blade is designed for slicing right through hearty vegetables such as carrots, celery and squash, and works well for cubing meat for stews and chili. Made in Germany, each Twin Signature knife features a hand-honed, laser-sharpened blade using Henckels signature FRIODUR high-carbon, ice-hardened process for producing quality stainless steel knives. The ergonomic handle has a traditional three-rivet construction encompassing a full tang for high durability.

5 out of 5 stars LOVE IT!!!   January 13, 2008

I have had this knife for almost a year and use it all the time. I would highly recommend it. The blade has remained sharp and continues to cut everything beautifully.

5 out of 5 stars Quality Knife   January 8, 2008

We have been very pleased with all of the Henckels products we own, and this knife is no exception. I use my santoku knife almost exclusively. This particular knife was also made in Germany--there are some cheaper versions of Henckels knives that were made in China, if that makes any difference to you when choosing which knife to buy.

4 out of 5 stars Great knife to replace some knives in the kitchen   November 24, 2007
JLower
It is hard to say one brand is better than the other when all the brands have different variations of one type. I suggest buying the knife based on usage and how the handle suits you. Most of the high quality knives are similar in construction but the handles are different in each one. It is better to go with the handle you feel most comfortable with, I believe the grip is very important in terms of control.

A good suggestion is maintaining it using a high quality sharpener or taking it to be sharpened.

This knife can pretty much do anything, except slice bread, peel fruit, and act as a cleaver. Foods do stick to it when you chop, like others said, but it is still a good knife. You will still need other tools, but this knife can replace a few similar sized chef's knives you will not need anymore.

5 out of 5 stars Best Santoku - Made in Germany   October 15, 2007

This is the best and lightest Santoku I have owned. If you can still get it, buy it. You will love it.

3 out of 5 stars Interesting knife   March 9, 2007

Good balance - great for light-duty chopping and mincing where you want to be close to (or directly over) the blade for control. All claims about grippy foods not sticking to the blade are bunk - tomatoes (etc) stick like they do to any other non-dimpled blade. High quality metal. Recommended if you find your standard chef's knife lacking for control.
