Editorial Reviews:

Product Description
This 4-1/2" Santoku Knife by KitchenAid may very well become your favorite. The high carbon, stainless steel blade offers exceptional performance, and, because it's hollow-ground, food doesn't stick and tear while cutting. The knife is properly weighted for balance and control, and the comfortable-grip handle is fully contoured and secured by 3 stainless steel rivets. Black handle. 4-1/2" blade. Imported.

5 out of 5 stars Don't judge by OOB sharpness   August 2, 2007

What's the point of judging a knife based on sharpness out-of-the-box? Whatever edge it comes with is going to degrade soon anyway, and require resharpening.

Knife sharpening should be considered a basic kitchen skill. If you don't want to learn how to use stones, pick up a Spyderco Sharpmaker 204MF (available at Amazon and EBay) to easily keep your knives in top shape. Cutting with a truly sharp knife is a joy - and your food tastes better because flavorful juices and oils stay in your food instead of being mashed out onto the cutting board. A sharp knife is a safe knife - a good edge will bite into hard objects and behave predictably, instead of sliding around.

OOB sharpness issues aside, this is a nice knife and a great value. The 420J2 steel is a cut above the "mystery metal" used in many knives in this price bracket. It sharpens up easily and holds an edge pretty well, not quite like a premium knife (Shun Classic, for example) but good for this price range. Handle and other fit and finish issues are good.

The shape and size are great for mincing small things like shallots and garlic. The mini-santoku shape provides good knuckle clearance, unlike a similar-sized paring knife. And as another reviewer pointed out, the hollows along the edge reduce sticking making this a good cheese knife.

This is not an essential knife - before getting something like this you should have a good 8-10" chef's knife, traditional parer, and >8" serrated bread knife. But it does make a handy complement to the big chef's knife and I find myself reaching for it often.

And by the way, KA also offers their santokus with a soft handle... individual tastes may vary but I find a hard handle gives much better control, an important issue when quickly mincing little things with a sharp edge millimeters away from the fingers on my left hand.

3 out of 5 stars Looks cool, feels solid, but not sharp and poorly designed   January 19, 2006

This knife looks and feels solid, but that is where the good part ends. Firstly, it is not sharp at all. After sharpening it for a bit though, it is now pretty sharp but still not as sharp as my Henckel's paring knife. Maybe I just need to keep sharpening it. Another problem is that it is shaped more like a mini cleaver than a true Santoku because the edge has very little curve. I think it is a good knife for the money, as long as you sharpen it. I think it is better to have one really good sharp knife than many ok knives. I generally never use this knife because I will always reach for the sharper Henckel's. If you are on a budget, try Victorinox knives- they're sharp.

4 out of 5 stars My wife's favorite knife!   August 29, 2005

We picked up this great little knife at Target and it has become my wife's favorite. It is a little small for my taste, I use a similar knife in the 7 inch length. But my wife uses this for everything- chopping, cutting, mincing, you name it. Also, the hollow edge makes it nice for cutting things like cheese because it doesn't stick as much. This is very similar to the knives used on the Food Network, but without the beefed up price tag. I'd recommend this for the avid home cook. Not sure how it would hold up to the rigors of professional cooking, since I'm not a pro. But for us, it works well.

2 out of 5 stars Trendy looks, shorts on being sharp   April 1, 2005

I picked this up on a whim at Target. Useless. Looks cool, but not sharp at all. spend 25-40 on a good paring knife... I'd probably avoid the whole KA line of knives... especially in the price bracket.
