Designed by Australian engineers and chefs for professional chefs, the Füri Tech Edge sharpening system does what a sharpening steel or whetstone can't: it maintains a precise 20-degree angle on both sides of the knife blade during sharpening, resulting in a razor-sharp edge. A knife is drawn through three different components in a progression of three stages, from restoring an extremely dulled blade, to coarse honing, to fine honing. Each component quickly inserts and removes from your existing Tech Edge system base. This Stage 1 Restorer component replaces a worn one. The unit uses tungsten carbide cutters to reshape a very dull knife blade while accurately positioning the blade as it is repeatedly drawn through. To use, simply insert the replacement into the Tech Edge base, where it is held securely, and swipe the knife through 6-12 times. The knife can then be honed on the Stage 2 and 3 fingers. The system works on any brand of regular cutlery (not for single-sided or serrated blades). --Ann Bieri

I saw it but did not believe the product actually worked. I was pleasantly surprised. I now have two of the Furi Tech products including the restorer.
Believe me they both work and work well. I am using old knives that I long ago thought could not be sharpened...they cut now like a razor. I would recommend purchasing the restorer for those knives that have long ago lost the angled edge and the diamond 'fingers' for keeping the edge on a regular basis. Wish I could find the replacement for the fine edge fingers.
