Watching a chef draw a blade across a classic butcher's steel looks pretty slick but don't try it at home unless you really know what you're doing. If the steel isn't angled properly, the shaping can be more detrimental to the blade than if it was just left alone. DMT's DiamondVee tabletop knife sharpener takes the guesswork out of sharpening. The contraption features two 4-inch-long, diamond-plated rods mounted into a plastic base. The rods form a V shape and are permanently aligned at the proper 20-degree sharpening angle to produce the correct edge every time. The ultra-abrasive, coarse diamond surface efficiently hones an edge in just a few light strokes along the inside of the "V." The DiamondVee is cleverly designed to accommodate either righties or lefties and has a plastic safety guard to protect the opposite hand. Very easy to use. For the price it does do a good job. Not razor sharp, but sharp. For the average person this will do just fine.

I learned about sharpening knives commercial fishing. It's impossible to fillet salmon and halibut with a dull knife. I learned to use big oil bath and water stones, which give the best results of all. But for ease of use around the kitchen on knives up to 9", a V sharpener is easiest to use and gives quite satisfactory results. Of those, the DiamondVee is my favorite - it's hard enough for good stainless knives, lasts at least five years with moderate use, and while it takes a little practice, it's something a rookie can master in short order. I still use a big water stone for larger knives as this just isn't big enough to work the tip, but for everything else this is my choice.

I can't say if it will last ten years, but this sharpener works quite well. It has breathed new life into dull knives.

It is a great concept to sharp knives, and works great. However, it will not last longer than a couple years. The bars are metal and dipped with a diamond abrassive, so over time and with use the abrassive will wear off rendering the rods bare and useless.
