Amazon.com Review High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than high-carbon stainless-steel knives. Edges are ground razor-sharp at a more acute angle than traditional European-style knives. Although Global also makes a "heavyweight" line, its original knives--of which the three knives in this set are examples--have thinner blades and are lighter than traditional knives. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety. Stainless-steel handles are molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. These three knives--an 8-inch chef's knife, a 5-1/2-inch cook's knife, and a 4-inch paring knife--equip a cook to perform most basic kitchen tasks. The two smaller knives' wedge-shaped handles are particularly well engineered for grasping securely with a relaxed hand. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. Being a new culinary arts student, it was cheaper for me to buy the 7 pc. set which included more knives, a sharpening steel and the carrying case. My only complaint is that the chef's knife chipped after just a few weeks (very small chip). The only thing I ever cut with it was vegetables on a cutting board. I can't figure out how it would have chipped. The knives do have a lifetime guarentee, but I can't send it back right now because I need it for class. All in all, I like my set very much!

I got my first two global knives as a wedding present more than a dozen years ago and today they're still just like new. Originally I was turned on by their looks, particularly their handles which seemed to fit my, small, hand much better than any others I'd tried and I've always collected good knives. Since then I've expanded my globals to over twenty, including a few steak knife sets, and I even take some with me when traveling abroad for more than a week or two. Easily hand washed and maintained: I have them professionally sharpened annually, they remain like new. I've never been tempted to replace them with anything else. If you love to cook, you'll really love doing it with the help of good knives.

They are the best I have used, they stay sharp for a very long time and a couple minutes with the global sharpener brings them right back when they finally go dull. Really, they make chopping fun. Only sharpen with global sharpeners or guides. I bought my mother in law a set and someone at her home sharpened them with a regular sharpener. Now they are just like other knives. Probably have to send them back to Global to regrind the blade angle or sharpen a few times with the proper sharpener. No one touches MY global knives!!! Honestly, I can't find anything I don't like about these knives. They fit my hand great, they stay sharp for months, they are light in weight, they are easy to sharpen (with the proper sharpener).

I have had my Global knife set for about 2 years now and haven't used it more than a couple dozen times. The blades went dull really quick, and I can't seem to get them sharp again. Maybe I just got a bad set.
