Amazon.com Review High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives--of which this cheese knife is an example--have thinner blades and are lighter than traditional European-style knives. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety. This 5-1/2-inch knife has holes in its blade so it slips through medium-firm and firm cheeses without sticking. The edge is ground on only one side and is both finely serrated and scalloped for cutting through rinds. Prongs on the end pick up slices for serving. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. This is a great knife for hard and soft cheeses. It has a good grip and comfortable design. My wife was skeptic about it but when she used it she immediately told me to order an additional one as a gift for her parents because they are cheese lovers too. Some people complain that the knife will make a second cut after the middle holes pass through but this will not happen if you make a straight cut. Strong knife, it doesn't bend easily, I have even cut through old Parmigianos, still you have to apply some force but it will feel very secure.
Global is simply the best...and my wife really likes them. February 6, 2007 Dartagnon (Washington, D.C.) My wife is the Iron Chef of the house, but I know a good thing when I see it. Both of us swear by this brand. They are much more expensive than going to Walmart, but not bad as far as "quality" knives go. They are well made, balanced, and look classy as well. Definitely my favorite. I plan to get the wife every type of Global knife ever made.

The idea of a cheese knife with "holes" in the blade is to reduce the friction as one slices cheese, thus ensuring consistant slices, without the cheese crumbling or falling apart. This Global knife delivers admirabley to the task. Indeed, the design best fits hard cheeses, and Global have (imho) the best knife for this, period. Our old "stamped" knife bends and is awkward (dangerous) on hard cheeses. For soft cheeses, this may not be the best knife, probably a knife such as one would use for pate would be best. But, it is the penultimate for soft cheeses, and the best all round cheese knife my wife and I have ever experienced. We never regret the purchase.

This knife is great for hard cheeses, I can cut them without the slices crumbling to pieces. It feels very comfortable and sturdy in my hand like my other Global knife. The blade has a serrated edge so you will not be able to sharpen it easily, but if you only use it for cheese, it should stay sharp for a long time. This is another beautiful Global knife.
