In short, it's worth it to pay a few extra bucks for a substantial and durable chef's knife. Made of hand-forged high-carbon stainless steel and honed by hand at the factory in Vermont, the LamsonSharp chef's knife fits the bill. At 10 inches, this model is the right size and weight for cooks with larger hands (and muscles!). The Delrin handle is more ergonomic than most wooden handles, plus it is dishwasher-safe.
