This medium-sized sauté pan is from Sitram's stellar line of cookware widely used in professional kitchens around the world. What distinguishes the Profiserie collection is the bottom: extra-thick layers of aluminum bonded to magnetic stainless steel for use on induction burners, an electromagnetic cooking technology. But this exceptional pan with a shining, polished finish performs perfectly on electric or gas burners as well. It heats so uniformly that even over the high heat of sautéing you'll be in perfect control. The smooth, rounded handle lets you keep the pan moving without needing an oven mitt. incredibly fast and even searing/cooking of thick cuts of meat and chopped vegetables. i'm extremely pleased with my decision to purchase this saute pan as i spent hours and hours reading cookware reviews shared by others. this pan outperforms my all-clad, calphalon and copper pans in the saute arena AND the sitram profiserie collection is nsf certified, tested to 1112 degrees farenheit, 18/10 stainless steel, suitable for all heat sources (including induction cook tops) and safe for ovens and freezers. with a matte finish and rounded, stay cool stainless steel, hand-welded handles and limited lifetime warranty, it's well worth the money. while my order did not include a lid, a matching sitram lid or a universal, no name lid is available.
