Wine oxidizes when exposed to air, causing a distinctive sherry-like off-odor and brownish tint that is increasingly recognizable with wine consumption experience. When wine tannins are oxidized, hydrogen peroxide is produced which subsequently oxidizes ethanol into acetaldehyde - the principal compound producing the oxidized odor and masking the wine's fragrance. On opening a bottle, acetaldehyde generation can be detected within as little as two to eight hours, depending on varietal, age, amount of wine contact with air, temperature, etc. White wines and older reds are particularly susceptible to oxidation damage. The biggest factor in oxidation is the amount of wine surface contact with air following opening and pouring. I ordered this item for my husband's birthday not knowing if he would like it, as neither of us knew anything about wine preservers. But, knowing my gadget-loving, wine-loving husband, I figured it was a good bet. To make a short story even shorter, he loved it. He has dragged every one of our friends and family members downstairs to see it. It does everything it says it will do, no problem with bait and switch here. The only thing I though was a little odd was that the insulation (you can see it through the window)was just silver styrofoam. For the price, I guess I expected something a little more high-tech.

I own it. Seems like it is balogna, but works better than any other system I have tried. I have had a bottle of wine in mine for weeks and it was as good when consumed the second time.

I thought this would be a great item to keep wine preserved at the best drinking temperature. I have received two cooling units and both were defective. Two expensive bottles of wine actually got hot and were ruined. The argon gas delivery system is cleaver, but I suspect there is a better way of delivering the gas for less than $200. I contacted the PEK sales VP who tells me there is a production issue with the cooling units. It took over a month to get the first (defective) unit.
My advice....Don't purchase this until the company gets the cooling unit problem addressed.
